Arranged rum with cherries

You therefore need between 200 and 300 grams of organic cherries. This arranged rum is therefore made in spring.

Wash them, cut them in half and pitted them. Black, fleshy and sweet cherries, picked directly from the tree, are ideal. Insert them into the jar, and complete with rum and five tablespoons of canadou. Add between three and five black peppercorns to spice up the mixture.

You should choose a white rum with a low alcohol content, or you take the risk of having a medicinal taste. To avoid this danger, add a vanilla pod, incised lengthwise. This will allow the rum to balance out over time.

Cherry rum has reddish tints (choose a nice jar!) and a light nose. On the palate, it develops sweet flavours (red and black fruits), a fluid texture and a medium body.

This arranged rum is reminiscent of the famous Kirsh, a brandy of German (and Swiss) origin. If you like these tones, try our strawberry rum recipe! (here supplemented by basil, mint, and here by ginger). I advise against multiplying and varying red fruits in rum.
